Crostini with livers cooked in Chianti Wine

Ingredients for 3 people:
– 200gr Chicken Livers
– One sausage
– 1/2 (half) Sweet and red-violet onion from Certaldo
– 1/2 (half a glass) Chianti Colli Fiorentini Organic Red Wine, an elegant wine possibly fermented in amphora or cement vats that brings out a fruity flavor
– Salt and pepper
– 2-3 sage leaves
– Extra virgin olive oil from the Chianti hills
– Homemade Tuscan bread made with ancient grain flour
Recipe for Crostini with livers cooked in Chianti Wine:
To prepare this flavorful dish, begin by finely chopping a red onion and browning it in a pan with two tablespoons of extra virgin olive oil. Add a skinned sausage to the pan and cook until browned. After a few minutes, introduce the cleaned livers to the pan, seasoning with salt and pepper.
Continue cooking, periodically moistening the mixture with a glass of Chianti Colli Fiorentini Bio. Once cooked, remove the livers and sausage from the pan and chop them finely. Separately, toast slices of bread. While still warm, soak the toasted bread with Chianti Colli Fiorentini Bio.
Spread the chopped liver and sausage mixture generously onto the soaked bread. Finally, serve the crostini hot, drizzled with a touch of Chianti extra virgin olive oil.
